While I agree with you, nothing seems to be a mystery at this point, so why not? Isn't Han Solo's entire past better left untouched? But here we are talking about a Han Solo movie, sans Harrison Ford, focused on his early years. Did we need to see how the Rebels acquired the plans for the Death Star? Nope, but here we are, just two weeks from Rogue One's release. Personally I would have been happy with one final Star Wars trilogy, VII-IX, but instead we're getting a new movie every year for the foreseeable future. Is what it is, so may as well just enjoy the ride I guess. Adding all of these anthology movies is completely unnecessary, and eventually I think it will make the whole series become stale due to over saturation, but that seems to be the way things work in the movie business these days.
