I found the speciality market close to me that has plate beef ribs cut two different ways, $8.99. Super psyched.

    If I remember correctly, you just did a brisket not too long ago that you were happy with? I would do something similar for your rub (maybe change 1 or 2 ingredients). If there wasn't any coffee in your rub, try that?

    Also, if you wrap them... pour in some stout. And, as always, WRAP TIGHT. You want to cook them to an IT of 203ish (just like brisket).

    Yes, brisket came out pretty good! I figured it would be pretty similar

    Perhaps a dumb question but when you say coffee in the rub...do you mean actual like, ground coffee?

    Yup... finely ground. I actually just sprinkle a light coat on. In fact, I've gotten into layering my rub rather than mixing up all the ingredients and then applying. In this order:

    Sugar
    Salt
    Onion/garlic powder/poultry seasoning/other spices
    Pepper
    Paprika (and/or coffee if I'm making beef)

    Basically, light to dark. I started doing it just out of laziness really... was out of rub and didn't feel like making any. But it also allows me to control and evenly distribute each ingredient.

    Turkey was alive Friday and smoked on Saturday. Hands down the best thing I’ve ever cooked.

    Looks good musk

    Doing some baby backs and chicken wings on the smoker today. Gonna go 3-2-1 for the ribs, wings will be for lunch. Going half with BBQ rub I used for the ribs and the other half hot (which I’ll sauce after). Beautiful day for some yard work and smoking here in CT, nothing better

    Been gorgeous in VT most of the week! Did some wings last night, and will be smoking some salmon today since it turned out so great last time.

    Wings and ribs came out amazing. The ribs were especially spectacular. Perhaps the best ribs I’ve ever had in my entire life. Went 3-2-1 method over cherry. Wrapped with apple cider vinegar and apple juice mix.

    I did 23 lbs of bacon (two whole bellys) in the ol' 22 WSM today.
    I wound up having to cut them into smaller pcs, and use my rib racks to stand them up to make them fit on both racks.
    It was cold and windy so I used more charcoal then I normally do, which of course got it too hot (I smoke them at around 200) but I finally got in under
    control
    The two slabs on the right are jalapeno and the ones on the left are just brown sugar.
    I should have done more Jalapeno

    I did a corned beef for the first time yesterday to make smoked reubens for dinner and it came out just fantastic. It was about a 4.5 lb cut, treated it just like a regular brisket except used mostly just fresh cracked pepper to rub with a tiny kiss of brisket rub. Smoked at 250, wrapped it at 165 internal and pulled at 203. Next time I'll probably pull it just a tad earlier as it was so fall apart tender that it was tough to get uniform slices, but it tasted amazing and was super moist.

    Smoked on the RT-700 and then dropped a cast iron griddle on the Bullseye to do the sandwiches. Riot Mode on the grill got up to 750 degrees even in the freezing cold with high winds! Buttered both sides of the marble rye and got it nice and crispy, a little sear on the sauerkraut and melted the cheese over the corned beef. Some of the best reubens I've ever eaten, will definitely be doing this again!

    Nice work on the bacon Dave and Alex, that corned beef looked fantastic!

    Can't remember if I shared this or not, but a few months back someone stole my Masterbuilt smoker. I had it for several years and it was fine for what it was. I had been wanting to upgrade and get something after we moved into our new house. Now that we've settled in and aren't working on as many projects, I've been researching a replacement. I've got a few buddies with Recteqs and they swear by them, a few even like it better than the Traeger. However, Traeger seems to have higher reviews and is recommended more between the two brands. My neighbor who does some competition barbecue and smoking has a Big Green Egg XL. I am now wondering if I should get a BGE, it truly seems to be the best of all worlds. Anyone have any thoughts or recommendations?

    Everyone always raves about the BGE. Never used one personally.

    Now owning 2 Recteq's, I am amazingly satisfied and would recommend them to anyone. Obviously I considered Traeger when I was in the market but the outstanding reviews about Recteq swayed me and it has lived up to the hype. The build quality is just absolutely outstanding (nicer than any Traeger I've seen in person, IMO.) The warranty can't be beat and their customer service is incredible. It's a fairly small company and they even give you the owner's cell phone # if you have an issue outside of their normal business hours.

    I've had the RT-700 since April and recently added the RT-380 Bullseye which I did a little review of a couple pages back in this thread. The Bullseye actually would be a great option if you're looking for something 'all in one' that you can do low and slow smoking or hot and fast grilling.

    Nope, it was actually a pre-packed one from Aldi! I think it was about $17 and about 4.5 lbs, Choice grade. I normally only will buy Prime for regular brisket but I figured for a corned beef that would be fine.

    I'd love to try curing one myself in the future though.

    Man, that sounds like a great recipe. I have no doubt doing it this way would turn out way better than the pre-brined ones with all the chemicals from the store too. Maybe I'll make that a project for next St. Patty's day!

    Anyone smoking their thanksgiving bird? Every year I consider it, I bail just cause the weather is so unpredictable and doesn’t seem worth the effort / risk. Same with deep frying, which is soooooo good!

    It's really not terribly difficult... you just have to be very precise with the curing salt/time.

    The good thing about doing your own is you can do a full brisket instead of just the little corned beef they sell at the store. It's also harder to find 'prime' in the store bought selections.

    This is the first one I did a few years ago.

    I'm going to give it a shot for the first time this year. I'm honestly not a huge turkey fan - last year the wife and I did Thanksgiving just the two of us + her brother and we made some really nice ribeyes instead! We're not gathering with her family this year due to COVID, but I'm going to smoke a turkey and we'll deliver to everyone's houses. I'm excited to do it for the first time, but worried I'm going to screw it up and ruin everyone's Thanksgiving dinner...as if enough hasn't gone wrong this year already.

    Yup... exactly. Saved some chunks for hash, etc.

    It's now a yearly Christmas request from my family.

    I'll likely do my bird on the smoker this year. It's just me and the wife this year so I'll defer to what she wants. But I do have some left over corn bread in the freezer that's crying out to be stuffing which, of course, would go better with a smokey bird. I cook mine at 325-350... so it doesn't really get a ton of smoke b/c it cooks faster. But the higher temp is necessary so the skin isn't rubbery.
