BBQ/Smoking/Grilling

So it's summer and everyone knows that summer is grilling season. I've got a 6 pound Boston Butt being smoked on the grill right now, it's got another 6 or so hours to go still but I can't wait for it to be done. BBQ

Any other BBQ enthusiasts out there?

Oh yes, a good friends dad makes a dry rub almost identical to Rendezvous' and he is always smoking ribs and brisket. Some day I'll learn to cook myself, no charcoal grill right now

It's great fun. I just bought a new Weber 22.5 Silver One Touch as a present to myself for my first real grilling season I mean, I've grilled plenty of times before, but this year I'm really grilling and smoking and stuff. It's awesome.

Ah yes, but summer is the true grilling season, ya know? Going out and grilling in the cold isn't nearly as fun. It's like making a nice hot bowl of chili when it's 102 degrees outside. Just doesn't fit.

italian sausage, sweet onion, bell peppers, good buns, spicy mustard, tin foil and a charcoal grill are all you need in life.

EDIT: dont forget the charcoal/lighting method or you got cold uncooked food.

Tis true. I made buffalo wings for a friend's 21st, and we grilled the wings rather than frying them. They were amazing.

sorry, didn't mean to come off as condescending or a dick

I went for awhile without a chimney starter and just recently bought one (with my new grill ) and I couldn't live without one now.

    Re: BBQ/Smoking/Grilling

I have a JennAir stainless propane grill, and a Charcoal with an offset box for smoking. The tip I would give on wings ( I work for a BarBQue restaurant about to me named one of the top 4 in the country possilby number 1 on GMA this weekend ) Put a nice rub on them and smoke them for an hour or so, then get your grill going nice and hot and finish them on the grill and give them a little char then toss them in your wing/BBQ sauce. Also something nice to do with steaks is cold smoke ( keep your temp around 100 ) them for an hour then grill them, they get a nice smoke penetration and the flavor is fantastic.

    Re: BBQ/Smoking/Grilling

my apartment complex doesn't allow grills because our balconys are really small, but I have a tiny charcoal one that's only about a foot tall. Love that thing. I can't wait to really start using it again.

    Great thread idea.

I just buy mesquite or hickory chips, soak them in water for twenty minutes (they create a lot more smoke that way), wrap them in some heavy duty foil, punch some holes in the foil, and throw them under the grate and on the burner cover. Works every time.

For the record, I'm usually the one soaked in Jack Daniels when I grill.
