Anyone have any experience doing a duck? I absolutely LOVE duck, but I haven't attempted one at home before. I've got one in my freezer that I grabbed the last time I went to the meat market. My initial thought is to cook, or at least finish at high temp because the skin on the duck is the best part and really crucial to get crispy/bite through. Outside of that, no idea how to approach as far as rub/seasoning, prep, etc.

    It will be for meals for weeks to come. They were just taking up a lot of freezer space and I was waiting for a decent stretch of days to just get them out, cook em, portion and vac seal... then it's several lunches/dinners that I don't need to worry much about.

    So I bought a pork butt for the first time ever. I was making a carnitas recipe which turned out to be the best Mexican I've ever made.

    But I didn't know that there was gonna be a bone I started cutting it up and hit it. I had way more than I needed for the recipe and I didn't wanna deal with it so I just cut way around the bone and threw that part back in the fridge. It probably still has close to a pound of meat on it so I didn't want it to go to waste. I'm just not sure what to do with it. Any ideas? If it was chicken or beef I'd think something stew-like but I'm not sure with pork.

    First, I'm thinking you didn't cook the pork to a high enough temp... 200ish is the magic number. The bone would be very apparent and slide right out like nothing... there would also be no need for a knife. It would pull apart easily.

    That's not to say you can't cook it to a lower temp... it's just not as tender and the fat would not have completely melted.

    No no no, sorry I didn't clarify -- I cut it up raw. Needed it in big chunks for what I was doing (forgive me, it was not actually bbq-ing, smoking, or grilling )

    Also, pulled pork tacos are usually my go-to leftover option, so I don't know what other use you'd have for it.

    yup... or just another pulled pork sandwich.

    Sounds like GSU's got raw pork meat on a bone though... the only place I can think for that is the garbage can.

    Y'all are crazy. I don't have a smoker, so I do pulled pork in the instant pot once in a while and it's pretty damn good. I usually use a boneless loin/roast for that. I buy the huge loin at Costco, cut off the two big ends for purposes like that, and cut the middle up into pork chops.

    Similar thing I did for the carnitas, but I wanted to try a pork butt for the first time. I think if I just treat it the same way and do a bbq pork type recipe, it'll be good. Not as much meat obviously but should make for a good lunch for 2.

    This was the carnitas. Shredded and then put under the broiler for about 10 minutes to get the crispies. We couldn't stop picking at it. Tacos night 1. Put some in a salad for lunch the next day.

    We portion and freeze leftover shredded pork butt. Usually get like 6 meals of pulled pork sandwiches out of 1 butt. It freezes pretty well. Only non sandwich leftover I've come up with is nachos. I'm curious if I could use the leftovers to make tamales, or if I need to prepare the pork a whole different way.

    Just so you know... I’m not a BBQ snob (anymore). Anything I do post is lighthearted and always sarcasm intended. I truly don’t care how someone chooses to cook anything or what vessel they use. I just would’ve never thought to cut a butt into chunks to cook it. Glad it worked out for you.

    I’ve cooked port shoulder in my instapot many times.

    Cut it into chunks, sear it for a while, add all the spices and pressure cook til done.

    As long as it's not already bbq sauced I don't see why not. We'll use a rotisserie chicken to make enchiladas. My buddy used some of his smoked brisket to make chili last week and it was amazing.

    I know we're a good group and not too judgmental. I know the instant pot was a big fad of the last few years but it's seriously been one of the best new appliances I've had. I use it a ton. Same with the air fryer. We like it so much we're gonna look at upgrading to a bigger one with more space. I love grilling but I like having a bunch of different methods for things. Can't beat the time savings of these counter appliances sometimes.

    My wife got a Ninja Foodie from her dad for Xmas, it's already been life-changing. She did a pot roast in it last week in 90 minutes, it tasted the exact same as the conventional crock pot or stovetop Dutch over methods. Thing is a cheat code.

    My parents got that one for Hanukkah and they already love it. They started off with chicken wings and onion rings, and on NYE he made freakin rack of lamb and fried zucchini.

    We use ours a lot for frozen fried things (fish sticks for the kiddo, veggie tots), wife did fried green tomatoes. I do chicken thighs in it and now salmon. Was gonna do it on the grill recently but it was either too cold or rainy, so I did the same exact thing in the air fryer and it was amazing.

    My only experience with duck on a bbq was as a kid. My Dad was cooking one(I guess for the first time) and didn't realize there's more fat in a duck than a chicken. I still have a mental image of flames shooting out around where he had tented it. My parents grew up in the depression so it was crispy duck for us that night.

    Other than that, the Peking duck I had in Shanghai was better than the one in Beijing. That always struck me as funny.

    I deboned a couple of hind-quarters off of a decent sized sow and brined them for a week in a basic salt/brown sugar/pink salt #1 brine, then trussed them back to a nice, round ham shape and smoked them for 12 hours at 180-200 with oak, mesquite and black cherry wood chunks. They came out as good as any store bought spiral sliced ham I 've had.

    I haven't backread completely (so I'm sorry), but I really want to get a pellet grill. I want to spend under $1000. I've read so many reviews, and there are always good reviews and bad reviews, so it is hard to know for sure. Obviously Traeger is a big name in the business. I also like some of the features (and price) on the Pitboss. Anybody have any recommendations (definitely get this, or definitely stay away from that).

    You can't go wrong with a Traeger or a Rectec. I just bought a Traeger Pro 575 and I love it. While the Pit boss does have a nice price point the construction, features and durability of the other two are hard to beat.
