Yea, I'm a ranch guy myself but a place not serving blue cheese is ridiculous. Also I think the term Buffalo Wings should be used in the broad sense. Everyone knows what it means, to get technical about it seems silly.

    It can get tricky, because "buffalo wings" is very generic in most places.

    With Domino's, anytime you asked someone what kind of wings they wanted, they would say "buffalo", or "mild", and I'd try to tell them - "we have hot, bbq, plain, or mango habanero", and they would say "I want buffalo" or "gimme mild".

    I primarily meant dip the celery in. But I've dipped my wings in blue cheese on more than several occasions. I've also been know to dip my pizza in buffalo wing sauce and blue cheese. Heaven. Last meal. Especially steel pan fried pizza.

    Is anybody old enough to remember when there was only three 3 flavors of Buffalo wings; mild, medium and hot?

    My purism I suppose is stemmed in that those were the only choices in the early 80's when I first started eating them and it remained that way for at least 15 years after in NEPA. Then all those sissy flavors started coming out. I kid. I did have jalapeno-honey-lime wings in my travels that were pretty damn good. And in college they had a Tex-Mex (half buffalo, half BBQ) at a local pizza joint that were pretty good as well.

    Fuck. Just remembered this bar in college. 10 cent wing and dollar pitchers and live music on Wednesday nights. Nostalgia.

    Thing about dips is, the processed crap is usually shite and sometimes almost neon-like; places that make their own bleu cheese dip from scratch get extra kudos from me.

    Ranch is more a pain in the ass to make from scratch as you're making scratch mayo first, I've been meaning to try making Buffalo Wing Dip using wing meat and from-scratch ranch dressing for ages.

    Duff's is good, but I've had better wings in some dive bars in WNY, including Judi's in Niagara Falls (right across from the outlet mall on Military). Their Cattleman's BBQ..... omg

    I don't see any difference between Duffs and Anchor Bar, only that Duffs hot sauce is hotter. Had both many times. I think a lot of animosity towards Anchor Bar comes from the fact that it's such a touristy location, but their Buffalo wings are extremely similar to most other places in Buffalo.

    Make a stop at the Dino, you won't regret it. You can make Duffs wings at home easy peasy lemon squeezy, just buy a deep fryer, you can't make Dino wings easily at all unless you're an accomplished smoker.

    And that, to me, is what differentiates a good place from great. I want something that I can't or wouldn't know how to replicate at home.

    That said, next time I'm in the area I would like to stop off at a couple places actually in Buffalo and give them a try.

    For some central CT people, there's 3 spots IMO with the best wings around.

    J. Timothy's in Plainville, dirt wings fried, sauced, then fried again then sauced again
    Central Cafe in Plainville- massive breaded wings with 80 different favors
    Sliders many locations - sliders is turning into a small chain but their original "medium" sauce is damn near perfect. ESPN magazine (ESPN is conveniently a short 10 minute drive from their original location, might be somewhat biased) rated them either 2 or 3 in best sports bars in the country.

    No Archie Moore's? the other branches are okay but the New Haven ones are phenomenal. I completely agree otherwise with a shout out to Bidwell Tavern up in Coventry I believe

    Chicken Wings, not Buffalo but...

    Hooter's TMI is serviceable for sure.
    BWW dry Buffalo rub isn't bad.
    Flaming Joe's is my goto in Spokane, especially since Hooters closed.

    Best I have ever had is Smitty's Tap in Leonore IL, population 110. Get them every time I am back in IL.
