I tihnk the main problem is that I only know how to cook it like 3 ways...roasted/broiled in some sort of sauce/marinade, "roasted" in a corn flake crust (homemade "fried"), or in a taco/fajita combination. how about some good recipes for chicken breast, that don't involve wrapping it up in bacon and covering it in cheese(therefore killing any attempt to make it a healthy meal).

I look forward to your help.
I know you're seeking chicken recipes, but what about ground turkey (which is a great sub for ground beef) and lean pork loin? Both are really good white meats.

    Re: Cooking

tacos with ground turkey breast instead of beef are a serious WIN.

    Here's my shrimp linguini:

    In a skillet:

    1T extra virgin olive oil
1/2 lb frozen shrimp (your choice or size and shape....i buy cooked, peeled, de-veined) you can use more if you think you'll eat more.
Turn the skillet on and start cooking the shrimp
    Add:
salt and pepper (a pinch or so of each)
    a pinch of garlic powder
a pinch of red pepper flakes
Remove shrimp when cooked. Then add:
1/2-2/3 cup of dry white wine (let the alcohol evaporate for a minute)
    Juice of one lemon
If the sauce is looking a little skimpy, you can add 1/4 to 1/3 cup of chicken stock or broth.
    Return shrimp to pan
Add about 1/2 lb cooked linguine to pan, toss to coat in sauce.
sprinkle some romano or parmesan cheese on the pasta and toss.

It won't be super saucy, it's kind of a sauce-less pasta.

    Serve with garlic bread.

I was just trying to think of easy, somewhat healthy, not that expensive recipes. Not everyone can afford to cook a meal that costs 30 bucks to make every night.

I mean, I could post a bangin' recipe for Chicken Chesapeake, Brachiole or Canard l'Orange, but who the shit would cook that stuff on a daily basis?

Then I went to Oz and got stuck in a rut doing shitty catering bar service work. I cant wait for the new year and I can get back in the kitchen.

I'm an amateur pizza maker with the hopes of opening my own business one day. So, if anyone has any questions regarding pizza stones, cooking practices, dough, sauce, or cheese - I can help you out. I will not, however, give you my recipes as I've been working on them for almost a decade.

When ever I try to make pizza the crust ends up way too thick and doughy - any advice for that>?

Was in the midst of becoming one, but I think I have decided I don't want to work in the restaurant world any more. Hours are far too long, and the pay far too little. I still love cooking, and want to get certified...I just think it'll be for personal enjoyment, and some catering on the side though.

I'm still open to any help/tips/recipe requests out there!

You'll have to be a bit more specific, but my experience tells me that you should use less dough for your individual pies and your not cooking the dough properly.

I would suggest a pizza dough weight, but depending on what style of pizza your making, either NY or American, your dough weights will vary.

Are you using a pizza stone?

Here is what my pizza crust looks like: It's a mix between NY & American.

I'm not much of a cook, but I made an unbelievable chicken adobo with sauteed baby bok choy about two weeks ago, and I'm planning on making it again Thursday night. Easily the best thing I have ever made.

I also enjoy making deep dish pizza from scratch from time to time, and I like to think I'm getting pretty good at it too! Pizza recipe is far too long for me to want to post, but I can post the chicken adobo recipe later if anyone would want it.

This looks amazing! I'd love to try and make a deep dish pizza - do you need a special pan though?

I make a good double-garlic crust, extra cheese, pepperoni and mushroom pizza.
This pic is while still cooking.

Are you using a pizza stone?

Here is what my pizza crust looks like: It's a mix between NY & American.

You do, but we found ours at Bed Bath and Beyond. Shouldn't be too hard to find.
