Cooking

recently got the cooking bug, i assume its from coming back home from college and was sick of cafeteria food that i dont even know really what is in half of the stuff, anyone have any good recipes or things they like to cook? im also obsessed with food network and some show on the travel channel, anyone else?

    What do you want a recipe for? Gimme something and I'll get you a recipe...I've been through Culinary College and have a 5 years in the field. Haven't worked in a kitchen in 2 years, but I have a huge stock pile of recipes I can dig through tommorw for you if you give me some ideas of what you might want.

    i cook almost every night.

    from fancy stuff down to earthy stuff.

    tonight i'm making the earthiest of earthy meals....my momma's chicken oscar!!

    SOO GOOD.

    in a cassarole:

    1 1lb package of frozen broc florets
    3 slices of swiss cheese over it
    5 think cut chicken breasts over that
    1 can cream of mushroom soup, cooked according to directions, poured over the top of that
    1/2 c italian style breadcrumbs and 1T of grated romano cheese and enough extra virgin olive oil to make them stick together when pushed with the back of a spoon against the cup.
    Sprinkle that mixture over the top

    Bake at 375 for about 45 minutes.

    Rice pilaf on the side.
    Serve with cranberry sauce.

    Reminds me of childhood. MMMMMMMM.

    I cook just about every night for my wife and I. Cooking is actually one of my favorite hobbies. Something about it helps me unwind after a long day of work.

    I love this one:

    Ingredients:
    Olive oil
    2 cups marinara sauce
    1/3 cup mascarpone cheese
    1/4 cup chopped fresh Italian parsley leaves
    2 teaspoons chopped fresh thyme leaves
    1 pound purchased cheese tortellini
    2 ounces thinly sliced smoked mozzarella
    1/4 cup freshly grated Parmesan

    Directions:
    Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.

    Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. Cover and bake until the sauce bubbles and the cheeses on top melt, about 30 minutes.

    Hey Colin, here's a request for you...

    so, the wife and I are trying to eat healthier, and not eat so much red meat, but we find that we really get tired of chicken breast. I tihnk the main problem is that I only know how to cook it like 3 ways...roasted/broiled in some sort of sauce/marinade, "roasted" in a corn flake crust (homemade "fried"), or in a taco/fajita combination. how about some good recipes for chicken breast, that don't involve wrapping it up in bacon and covering it in cheese(therefore killing any attempt to make it a healthy meal).

    I look forward to your help.

    Here is a good one for Chicken Cacciatore. I made it about a month ago and it was great. But I skipped the red pepper beacuse the wife and I do not like cooked peppers.

    I love to cook and have been told I'm very good at it. To me, it's a meditative exercise, similar to my artwork, where I just get lost for a while until I find what I'm looking for, if that makes any sense. Lately, I've been studying a lot of Jacques Pepin to improve my French cooking skills, he's pretty amazing. Growing up in an Italian household, maybe a love of cooking and good food is in my genes. I make as much as I can completely from scratch, including pasta, bread, etc. Spending half the day to make a good meal makes me very happy.

    Peppery Maple Chicken:

    1tsbp Butter
    4 Skinless/bonless Chicken Breasts
    1 Cup Chicken Broth
    1 tsp Rosemary leaves, roughly chopped
    1/2 tsp fresh gound black pepper
    2tbsp pure maple syurp....not that Aunt Jemima stuff

    -Melt the butter over med-high heat and add the chicken...saute until golden (3-4 min per side).
    -Pour in the broth and scrape any brown bits from the bottom of the pan and stir them in.
    -Add rosemary, pepper, and a generous pinch of salt.
    -Bring to a boil and occasionally stir.

    -Reduce the heat to a simmer, covered. Turn the chicken every 5min or so until cooked (10-15 min)
    -Remove the chicken to a plate and cover with tin foil
    -Add maple syurp to the pan juices, and boil uncovered until the sauce has reduced to about 1/3 Cup. Don't forget to stir! (6-8min)
    -Pour sauce over chicken and enjoy!

    Lemon Chicken (similar to some Italian chicken whose name I can't recall)

    2 chicken breasts
    2 lemons, juiced
    3-4 T olive oil
    6-8 cloves garlic, finely chopped
    1/4 c dry white wine
    3 c chicken stock
    Salt & Pepper
    1 T cold unsalted butter
    1/4 c chopped parsley
    3 T flour

    Cut chicken into small pieces, pound to desired thinness. Coat chicken with flour, salt and pepper. Fry in large skillet (you can use oil if you want, we use about 1 T olive oil). Set aside.

    In the same skillet, heat 3 T olive oil, add garlic, salt and pepper. Once garlic is cooked (not brown), add wine, cook 1 minute scraping the bottom of the pan. Add chicken stock, lemon juice to taste, chicken. Simmer 15-20 minutes covered. Taste and season appropriately. Add butter, stir. Add parsley, stir and serve over brown rice or pasta.

    We usually double the "sauce" components, and sometimes add capers if I want it extra salty. Also, measurements are approximate, as we've been making it so long I just kind of add and taste. Enjoy!

    Me too, I need to get into the "zone", just like when I'm working in the studio. I'll see if I can dig out my favorite bread recipe (Italian herb bread) and send it to you later. It's the best I've ever had.

    oooo post this one when u can, i lovvvveee love love anything buffalo chicken, in college at the cafeteria I smother everything with buffalo sauce, and my mom makes this amazing buffalo chicken dip she makes every time i come home

    Bread is the only thing I bake too. I'd take a fresh, hot baguette with butter over some cake or cookie any day of the week.

    Also, I love the recipes on the box of bisquick. they're usually simple as well. love the chicken pot pie.

    You can make wicked tasty dishes just by using staples in your house.

    I'm a huge fan of buying a lot of different kinds of condensed soups, especially cheddar-broccoli. Brown some chicken in a skillet, add a bit of olive oil and some frozen broccoli...and when the broccoli is heated up, add a can of condensed cheddar-broccoli soup and heat through. Really good over pasta.

    Also, some browned hamburg, 1/2 a pound of noodles and a can of condensed tomato soup is really good, aka "Polish Spaghetti".
