    Baked covered in dry rub. Today I’m finishing one Pyrex dish with Dino BBQ Wango Tango, and the other with a Carolina BBQ sowce.

    My buddy does slow baked wings and they come out so fucking crispy it's amazing, cooks them at 250 I think on non-stick foil. He also makes his own ranch dressing from scratch, so much better than most of the kife you buy in the stores.

    The ones I did above were fucking perfection, literally just degloved each wing with nothing but clean bone leftover.

    One pan was caramelized with Dino BBQ Wango Tango, the other with a Carolina BBQ (think kind of tangy/vinegar-ey).

    I can never seem to make great buffalo wings at home, they are always just ok.

    I did make Jamaican jerk baked wings yesterday, they were fantastic.

    So I coated my wings with baking powder and salt and left them in the fridge overnight. Cooked them for 50 minutes at 450 and they came out near perfect. Crispiness was there, I just need to use less salt next time. Still very delicious. I went with basic with the sauce Frank's plus some melted butter

    No I don't think they could be described as "slow baked" if he was cooking them at 482F!


    Low and slow, just like smoking, does them for about 2.5~3 hours I think and then turns them up a little just at the end.

    I missed the 'slow baked'.

    I've never been able to achieve crispy skin with low temps... even when I do them on the smoker, I cook them at about 350.

    Never mind, I must have been baked when he was last over making them because it SEEMED like it was 2.5~3 hours.

    He just texted me back to say 375F for 1.5 hours and no longer or they'll dry out. You pull them around the 1 hour mark and drain the fat from the pan that's accumulated if you're doing enough of them that you get a big puddle of fat. I think he did 3-4 lbs last time he was over. I can't get enough of them with the homemade from scratch ranch, so good.

    Sounds about right.

    Chicken skin needs a higher temp to render down and become crispy. At low temps it ends up rubbery. Not that cooking it low is a bad thing... it's just at some point you're going to need to blast the heat to get the skin edible.

    I did mine for 1.5 hours @380 degrees then lowered them to 275 until serving.

    Buttermilk then seasoned gluten free flour. You got to turn them a lot so they don’t stick. They were the best I’ve made.

    Did half spicy Asian, half buffalo.

    Disposable aluminum pan that I also made BBQ chicken in after the wings were done

    I wouldn't go that far. I prefer blue cheese because of my superior palate, but there's nothing wrong with a quality ranch.

    It will look gross - but if put the wings in a steamer basket for 20 minutes above and inch of boiling water you can render out the excess fat and water in the skin.

    Afterwards, pat dry cool for an hour in the fridge and then bake 30 minutes on racks flipping once.
