My wife and I went the first two years (she was pregnant last year so we couldn't go). Anyway, during the first year, we realized quickly the lunch and dinner buffets were pretty bad so on Day 2 we got reservations at a different restaurant each night without a problem. There were so many options that if a particular place or time was booked, we'd just find something else. I remember liking every spot we tried except for the seafood place, which was just ok.
While it's not at Barcelo any more, I would expect it'll be a similar experience.
fyi the breakfast buffets weren't bad because you could get things like eggs made-to-order.
another pro-tip I've given in years past: if you like fruity drinks, take some fresh fruit to-go from the breakfast buffet and then later when you're boozin it up on the beach, have the bartenders squeeze, crush, blend, muddle, whatever your fruit into your drink instead of the shitty "fruit" syrup they normally pour out of those nondescript white bottles.
