Good advice here. I think Act IV is probably the most accessible of The Acts, but I got into them when II was first released. V is actually my favorite and the most recent.
Most of The Dear Hunter's catalog comes from Act I-V (a full story across five albums) but the Color Spectrum is also a big part of it. It is 9 4-track eps; one for each color and all very different from each other.
They also have a couple albums that aren't a part of any larger work. Migrant is easily my favorite of those.
For Between the Buried and Me I would recommend starting with Colors. This is where they really come into their own. The previous album, Alaska, shows glimpses of where they were going, but Colors is a huge jump forward and possibly still their best album. After Colors I'd check out The Great Misdirect, The Parallax II, and The Coma Machine.
There are also live versions of Colors, Parallax II and Coma Machine which are a great showcase of how great these guys really are. Parallax II is "live in studio" but the other two are actual live shows where they played through the albums
