I would start with
Europe '72. That was what hooked me. If you don't have it, get it. Now. It really showcases the band over several nights overseas during what I think was their prime.
Then, I would say move on to The Closing of Winterland, and Ladies and Gentlemen...(Fillmore East 1970). Some
REALLY great jams on there.
I wouldn't really "waste time" with their studio albums. I have them all and barely listen to them.
Not that it's a "waste", it's just the genius that is the Dead really is much more apparent on their live performances...not so much in studio recordings.
Also, the Archive has SBD recordings of just about every show...definitely worth checking out. Like I said earlier, my favorite era was 70-73, but listen to it all, then see what you dig the most.
If you're into dvd's, View from the Vault I & II are fantastic, as is The Closing of Winterland (CD/DVD), and Downhill From Here (Alpine Valley) is a good later Dead show.
God, I love them so much. I could talk about their music all day.
