Bolognese is ground meat cooked fairly well done with carrots/onions/celery... traditionally the veggies are removed then a basic tomato sauce is added, not marinara.
When I make bolognese I cook the meat to smithereens, almost burned, then deglaze the pan with red wine and beef stock to get all the flavors out of the pan and have the meat suck in all that fluid. In another pan I'll sauté the veggies then purée it. Add it to the meat then add tomato sauce and cook it for a bit
Serve with a rigatoni style pasta and I shave fresh horseradish on top instead of parmigiano reggiano. Don't knock it until you try it. The horseradish substitute is out of this world
