So you're familiar with how prestiging worked in the past four titles: when you prestige, you get a new create-a-class every other prestige, and that's it. So prestige 1 new class, prestige 2 nothing, and so on.
But now when you prestige, you're brought to a prestige shop. In the prestige shop, you're given a token for every time you've prestiged in MW3, plus one for every past CoD you've prestiged in (from MW1 on). And you're presented with a number of options to use your tokens on. They are:
Additional create-a-class: The classic prestige reward.
Double XP: You get 2 hours (in-game hours, so not counting in lobby or anything like that) of double XP.
Double Weapon XP: In MW3, you level up weapons independent of your character level. So if you have a gun that you really, really like, and want to unlock all of the attachments/specializations (another new thing, basically gun perks) quickly, this will do it.
Unlock gear: This lets you have an item (weapon/equipment/grenade type/etc) with you from level 1. So say the FAD is your favorite assault rifle (it's very similar to the TAR-21 in MW2), but it's one of the last ARs to unlock. With unlock gear, you get it from level one.

Prestige Package: So these three aren't fully fleshed out yet. On a very early build of MW3, these three things were actually six things: reg/hard/prestige titles & emblems, and reg/hard/prestige challenges. The assumption is that they combined both of those into one "package". You have to unlock them in order, so you can't get Prestige before hardened or reg, or hardened before reg. But as I said, the assumption is that this will be a combination of what we saw before, being specialty titles and emblems, and some challenges.
Reset stats: Exactly what it says. It wipes your stats clean.
