There are a few rogue chili recipe threads but I felt we needed something official to salute one of the great foods of winter.

Eating chili, drinking beer and watching football (even if it's the buffalo bills) is a solid 9.5/10 experience. NOBODY DISPUTES THIS.

Please use this thread to post chili recipe's, stories, fetishes and other random thoughts.

I made chili last weekend with ants user Thomas_K that turned out pretty great:

1lb organic ground lean sirloing
1lb organic ground buffalo
1 sweet onion, chopped
2 jalapeno peppers, chopped finely, seeds removed
1 green bell pepper, chopped
1 can black beans
1 can pinto beans
2 large cans stewed tomatoes
1 small can tomato paste.
chili powder
other spices

browned meat and vegetables in pan, drained fat. Cooked with other ingredients in slow cooker for about 5 hours.

Chili Recipe:

1lb ground beef
250g ground pork
250g ground veal
1lb hot Italian sausage meat (no casings or anything)
6 strips of bacon, chopped
1 28oz can of red kidney (drained and rinsed)
1 28oz can of black eyed peas (drained and rinsed)
1 large (28oz I think) can of diced tomatoes
1 6oz can of tomato paste
1 yellow onion, diced
1 red pepper, seeds removed & diced
1 green pepper, seeds removed & diced
3 stalks of celery, diced
1 chili pepper, seeds removed & diced
2 cups frozen corn
1 bottle of beer
Beef stock (approx. ½ - 1 cup)
Approx. 1/4 cup chili powder
1tbsp Worcestershire sauce
4 cloves of garlic, minced
(all of the following are approximate values, just use what feels right to you)
1 tbsp dried oregano
2 tsp cumin
2 tsp of your favourite hot sauce
1 tsp dried basil
1 tsp cayenne pepper
1 tsp paprika
1 tsp crushed red chilis
1 tsp sugar
Salt & Pepper

1. Preheat a large stock pot on medium heat, and put the bacon in. Cook until semi-crisp and remove from the pot, leaving the fat behind.
2. In small batches, brown off all the remaining ground meat, and remove with a slotted spoon into a bowl until all meat is cooked. Then, drain the fat and liquid out of the pot
3. Add the onion, celery, and peppers to the pan, season with salt and pepper and cook for 2-3 min until they begin to soften.
4. At this point, add in all the dried herbs and spices (except the chili powder) Stir and cook for 1 min
5. Add the can of tomato paste, and chili powder stir and cook for 1-2min.
6. Add in diced tomatoes, beans, hot sauce, beer and beef stock, all the ground meat, bacon and any ‘meat juice’ that has accumulated in the bowl. Stir well to combine everything.
7. Allow the pot to come up to temperature and simmer uncovered for minimum of 2hrs. Give the pot a stir every 15min or so. If things appear to be dry/too thick, just add some more beef stock and/or beer.
8. The longer it simmers, the better it will taste. If after 3+ hours things are a bit runny, just skim off some of the excess liquid and simmer it down to the desired consistency (all up to your preference)
9. Add in the frozen corn, stir and in 10min have a taste test.
10. Adjust with salt, peppers and additional chili powder if need be
11. Serve with warm corn-bread (recipe below)

Corn Bread (to go with the wicked Chili above):

2 cups Corn Meal
2 ½ cups Milk
1 ½ cups flour
1 tbsp. Baking Powder
½ cup sugar
1 tsp salt
2 eggs
½ cup vegetable oil

1. Preheat your oven to 350oF and grease a 9x13 glass pan
2. Whisk together the Corn Meal and Milk, let it sit for 5min, and then whisk again. Repeat for 15min
3. In the meantime, combine the flour, baking powder, sugar and salt in a bowl
4. Whisk together the eggs and oil
5. Mix everything together, and continue mix to mix for about 5min
6. Pour the batter into your prepared pan, and back for approximately 30 min, or until you can insert a knife and it comes out clean
7. Allow to cool in the pan and cut into pieces to serve warm with the chili

What does everyone like on top of their chili?

I like a splash of tobasco, shredded cheese, chopped raw onions and maybe some chives.

My Dad's recipe is below. He got kicked out of our old church's chili contest when I was a kid because it uses beer.

But seriously, this is my favorite chili ever. Better than both sets of grandparents' recipes, better than my mom's, better than any of my friends' chili. Pretty easy to make, too. Enjoy!

Ingredients
Big pot
Blender
3 pounds ground beef
1 medium onion
2 28 oz cans whole tomatoes
3 16 oz cans dark red kidney beans
2 cans domestic beer
1 bottle Dark Porter beer
Cumin
Chili powder
Curry powder
Ginger
Mustard powder
Hungarian paprika
Habanero pepper
Black ground pepper
Salt


Preparation
In the large pot, fry three pounds of beef with chopped medium onion, (approx) 2 tablespoons each of cumin and chili powder, and ½ teaspoon habanero pepper. Drain grease, and set aside.

In the blender, put 1 can of whole tomatoes and (approx) 1 teaspoon of cumin, chili powder, Hungarian paprika, salt, black pepper, and (approx) ½ teaspoon of curry powder, ginger, mustard powder and habanero. Blend completely and add to pot.

In the blender, chop the second can of tomatoes. Add to pot. Add 2 cans of domestic beer, and 3 cans kidney beans. Add ground beef and add water if needed (just rinse cans).

Bring to rolling boil for 5 minutes and remove from heat. Clean up mess. Bring pot to boil again for 5 minutes and remove from heat. Add chili powder, cumin and pepper if needed to tweak flavor. Bring pot to boil again for 5 minutes and remove from heat. Pour 1 bottle of dark Porter into frosted mug... drink and enjoy.

Whenever making Chili, its best to avoid the crock-pot if possible as you lose out on TONS of flavour in the form or little brown bits on the bottom of your pan from browning the meat etc. There are ways around this, but it's best to just go stove-top all the way.

I'm not saying crock-pot chili is flavourless, rather that stove-top is going to be more flavourful.

The best way to cook chili is in an ENORMOUS stove-top pot. With an enormous wooden spoon for occasional stirring.
